Upgrade for an Upgrade – Premium Hospitality Cuisine Refined

Circuit of The Americas’ new catering partner, Proof of the Pudding, will provide their top-tier food and beverage service to all premium hospitality spaces, in addition to providing options for all ticketholders around the track. While the Atlanta-based company handled most of those spaces in 2022, standardizing staffing, menus, and service allows both COTA and POP to deliver every guest a world-class experience fit for a world-class entertainment and sports venue. 

Meet The Chefs 

Chef Nick Klug, Vice President of Culinary, Sports & Entertainment at Proof of the Pudding, has been in the food and beverage industry for over a decade and a half. Before running the culinary program at Proof of the Pudding, he started his career in resort hotels.  From there, he transitioned to Sports and Entertainment by working in buildings such as Lambeau Field, Churchill Downs, and Philips Arena and events such as the Stanley Cup Finals, MLB Playoffs, and The Kentucky Derby.  He now oversees the culinary program at Proof Sports and Entertainment with eight colleges including Duke University and the University of Georgia, 9 PGA Golf Tournaments including Presidents Cup and The Players Championship, 2 racetracks, and Shaky Knees Music Festivals.  He has a passion for southern, Latin American, and Korean cuisines. 

Chef Andy Knudson is a distinguished chef currently based in Dripping Springs, Texas renowned for his mastery of live fire cooking and his unwavering commitment to utilizing locally sourced ingredients. With a prestigious culinary journey that includes apprenticeships under the guidance of luminaries such as Daniel Boulud, Guy Savoy, Bobby Flay, and Marc Forgione, chef has cultivated his culinary talents to extraordinary heights. His cuisine is a harmonious blend of tradition and innovation, seamlessly merging classical culinary techniques with avant-garde creativity. In each of Andy’s creations, he pays homage to the nuanced flavors of locally cultivated produce, elevating them through the mesmerizing dance of flames. As a culinary virtuoso, Chef Knudson crafts dining experiences that not only captivate the senses but also honor the timeless roots of gastronomy, leaving an indelible mark on the world of fine cuisine. 

Also joining the team are chefs from some of Austin’s most celebrated restaurants and hospitality, including Chef Brandan Yancy of Austin Oyster Co., Sarah Heard and Nathan Lemley of Commerce Café, Chris Bostick of Nice Things Hospitality, Chef Jules Stoddart of Little Ola’s Biscuits, Chef Faraz Vohra and Chef Faseeh Vohra of Shawarma Point, Matt Leone of Smoke Game Strong, and Tristan Lora of Badger. 

Dish It Out 

With a focus on local and sustainable foods, find pastries from Easy Tiger, Tex-Mex dishes, and delicious snacks throughout the day. Explore sushi stations, pressed sandwiches, stone fired pizza, and taco stations with the option to customize some meals. 

Bars are always open with specialty drinks, coffees and teas, and more non-alcoholic offerings.
